Hi, I’m Kari!
I want to help you savor every bite, even if it has to be gluten-free!
In March 2017, at age 37, I was diagnosed with Celiac Disease. What a total life change! I decided to start this blog so that I can document my journey and help other Celiac warriors.
It is, at first, very daunting to hear that you can never ever have gluten again. It takes time to find your rhythm and learn ALL things gluten-free. After I got over the initial shock and felt like I had a handle on this new lifestyle, I realized that everything (unexpectedly) has kind of come full circle for me. My college degree is actually in Food and Nutrition. I didn’t do anything in that field after graduation, but I have kept a special place in my heart for everything I learned in college. Now that I am an “expert” on living with Celiac Disease, I truly feel like I am meant to share my passion for navigating this gluten-free life with everyone!
My hope is that I can help YOU! I want to share all the safe restaurants I find, my favorite gluten-free products, how to travel with a food restriction, and recipes that are special to me and my family. You’ll notice there is a section on this site called My Mom’s Cookbook. This is near and dear to my heart as it is a place I will keep all the recipes my mom included in a cookbook she gave our family a few years before she passed away. My goal is to recreate every recipe in that cookbook, but in a gluten-free version. I hope you enjoy these recipes as much as I do!
I proudly live in Minneapolis, Minnesota and I am a stay-at-home mom to two beautiful children, Lucy and Jack. I also have a wonderfully supportive husband, Brian, who is not afraid to get in the kitchen and try new gluten-free recipes with me.
